Ingredients

1 bunch pumpkin leaves

1 onion, chopped

2 tomatoes, chopped

1/2 cup water

1 cup peanuts, powdered

2 tbsp oil

Method

Wash the pumpkin leaves and pull out the outer fibres, by holding the stem in one hand.

Finely chop the leaves and place in a pan along with the chopped onion, tomatoes and water.

Cover and cook until the leaves wilt.

Open the pan and continue cooking until the water is reduced to half.

Add the powdered peanuts and oil, and simmer for 10 minutes.

Temper or garnish with spices and seasonings of your choice.

Serve hot.
